Nitrite levels

Good morning all
I have a question. I moved from a 20 gallon brackish tank to a 75 gallon brackish tank a month ago. I am having issues with my nitrite levels. My ammonia is at 0 but my nitrites will not budge from .25. I have an Aqua Top CF500UV filtration system that is loaded to the max with bio filter and ceramic rings. I do weekly 10 gallon water changes because I don't want to take too much water out because I think it is still cycling. I also put in daily Sea Chem Stability. I feed a little once a day. I just cannot get the nitrites down and have been stuck at .25 for 2 weeks now
Can anyone help please? I have one fiddler crab and one large and two small figure eight puffs

Get some seachem prime. It will neutralize your nitrite. Dose every one to two days until the tank is cycled. You should try doing 20 gallon water changes.
